Spray-on oven cleaner softens the top layer of carbon and leaves the rest. That is why an oven cleaned that way looks better for a fortnight and then goes straight back.
We take the oven apart. Door glass comes out and both internal panes are cleaned — that brown film between the panes that you cannot reach is the thing people most want fixed and it is why the door never looks clean no matter how much you scrub the outside. Racks, runners, side liners, trays and the fan cover come out and go into a heated soak tank in the van. The cavity is cleaned by hand with non-caustic gel. Everything is rebuilt and tested before we leave.

Traditional oven cleaning uses caustic soda. It works, and it also fumes badly, burns skin, damages the enamel over repeated use and means you cannot use the kitchen for hours afterwards. In a Spanish apartment with tiled surfaces, limited ventilation and often a galley kitchen with no window, that is genuinely unpleasant.
